Prior to joining the Fionn’s Family, Mauro had been an experienced restaurateur, starting off as a dishwasher at age 13. After having spent most of his career in fine dining, Mauro was exciting about getting into a pub that wasn’t stuffy – one where someone could let their hair down and enjoy themselves.
When asked what it takes to be a successful franchisee, Mauro cannot overemphasize the importance of being a hands-on operator and rolling up your sleeves.
Mauro’s favourite memory with Fionn MacCool’s was his grand opening party. His partners, numerous CARA employees and community members from the area in which he opened the pub had come out to support him. He’s proud to be able to showcase all the hard work he put into creating a successful restaurant!
Before becoming a franchisee with Fionn MacCool’s Paul had worked at one of Canada’s leading upscale casual restaurants for 20 years in various provincial capitals. In 2013, his sister introduced him to an investor and he gladly became the operating partner for his Fionn’s in Winnipeg!
Paul recognized a great opportunity to grow a relatively young brand, and says that he couldn’t have done it without embracing the publican lifestyle!
His fondest memory with Fionn MacCool’s was after his eight weeks of training, opening his restaurant for the first time and seeing guests come through the doors! Even after being in the industry for 20 years he still felt a rush on his first day in his new restaurant!
